But pumpkin can be used for more than signaling the start of a new season. Like all vegetables, pumpkin has benefits that can keep you healthy year round.

    Pumpkin is abundant in Vitamin C

    Pumpkin is rich in dietary fiber, antioxidants, minerals, and vitamins[1]. It's low in all the things that we try to avoid. Such as saturated fats, cholesterol, and calories. Even the seeds can be beneficial! Pumpkin seeds have a protective effect against diabetes. They help to stabilize blood sugar and protecting the insulin-producing cells in the body against damage[2].

    Suffer from arthritis? Pumpkin can help you with that as well! Pumpkin is abundant in Vitamin C. This vitamin is needed to help the body rebuild cartilage in the joints. Consuming enough Vitamin C can improve joint health and prevent inflammatory arthritis[3].  Less inflammation means less pain!

    Pumpkin Year Round

    Next time you see a pumpkin recipe, you may want to consider saving it. Cooking with pumpkin is a great way to get all the benefits it has to offer. Pumpkin can be enjoyed all the time, but with their popularity in the Fall, it is easy to enjoy them even more.
