But pumpkin can be used for more than signaling the start of a new season. Like all vegetables, pumpkin has benefits that can keep you healthy year round.

    Pumpkin is abundant in Vitamin C

    Pumpkin is rich in dietary fiber, antioxidants, minerals, and vitamins[1]. It's low in all the things that we try to avoid. Such as saturated fats, cholesterol, and calories. Even the seeds can be beneficial! Pumpkin seeds have a protective effect against diabetes. They help to stabilize blood sugar and protecting the insulin-producing cells in the body against damage[2].
